1 ½ teaspoons each of
    vegetable oil and butter

½ cup diced onion

1 ½ cups cooked, scrambled Vitto G’Morn’n Breakfast Sausage

8 beaten eggs

cup milk

½ cup grated cheddar cheese,

½ cup grated Mozzarella cheese,

Oven Baked Vitto Breakfast Sausage Omelette

Preheat oven to 400º and grease a 9 X 9 inch square pan. Heat oil and butter in a skillet over moderate heat. While the pan is heating, beat the eggs with the milk in a large mixing bowl until well blended but not frothy. Add onions to the heated skillet and saute' a few minutes or until softened. Add Vitto G’Morn’n Breakfast sausage and remove from heat. Stir the sausage mixture and 1/4 cup each of the cheddar and Mozzarella cheese into the egg mixture. Salt and pepper to taste. Pour into the pan and sprinkle the remaining cheese over the top. Place in preheated oven for 20-30 minutes or until the top is lightly browned. Remove from the oven and serve. Serves 6
